I love using jams as a secret flavoring agent in my recipes. This BBQ-pulled chicken sandwich uses mango jam as its base and then gets topped with mango salsa to ring in the vibrant flavors. Don't put yourself in a box because you can use this chicken on top of nachos, pizza, or anything your heart desires.
Serving: 4-6 Ingredients:
BBQ Pulled Chicken
3 boneless skinless chicken breasts
2 tablespoons Epis (optional)
1/2 cup red onions
3 cloves garlic - minced
1 18oz bottle of BBQ sauce (I prefer anything that has honey in it)
1/4 cup apple cider vinegar
3/4 cup mango jam
1 lime - juiced
A bunch of seasonings
1/2 tsp cayenne pepper
1/2 tsp of garlic powder
1 tsp of salt
1 tsp of pepper
1/8 tsp of clove powder
Brioche Buns
Mango Salsa
1 cup ripe mango - diced
1/4 cup red onions - sliced
1 Tbsp cilantro - chopped
2 Tbsp lime juice
Salt to taste
Instructions:
Clean and prepare your chicken. For this recipe, you do not need to cut the chicken in preparation for the slow cooker/crock pot. Because once it’s done cooking, you will shred it.
Optional: if you are using the Epis marinade, add it to your prepared chicken and allow it to marinate for 2 hours.
Preheat a crockpot on the high setting.
Mix the onions, garlic, bbq sauce, apple cider vinegar, mango jam, lime juice, and seasonings in a bowl.
Add the chicken into bowl mango BBQ sauce and combine.
Next, add the saucy chicken mixture to the heated slow cooker.
Cook for about 3-4 hours or until the chicken is done.
Meanwhile, prep the mango salsa.
In a bowl, add the diced mangos, red onions, cilantro, and lime juice and combine. Add salt to taste.
Refrigerate the salsa for about 3 hours while the chicken cooks.
Once the chicken is done cooking, take each breast out and use a fork to shred it.
Add the shredded chicken back into the crockpot and allow it to cook for about 20 more minutes in the sauce. Make sure you taste it because this is your opportunity to add more spices or salt if necessary.
Optional: If like your shredded chicken to have some crisp to it, lay out your pulled chicken on a baking sheet and place it in the oven on broil until it gets crisped up.
Once the Mango BBQ pulled chicken is to your liking, assemble your sandwiches. THE FUNNNNN PART!!!!
Toast your brioche bread, and remember to butter the buns. Next, add a heaping serving of pulled chicken, followed by the fresh mango salsa. Serve with chips. I prefer classic ruffles.
