Rice can be very heavy. Quinoa is a great alternative to replace rice!
Ingredients:
1 1/2 cups of quinoa
1 cup of coconut milk
1 1/2 cup of veggie/chicken broth
1 (15 oz) can of kidney beans
2 bay leaves
5 sprigs of thyme
1 medium-sized onion - diced
2 tbsp of garlic
1 teaspoon of tomato paste
2 tablespoons of olive oil
1/4 teaspoon of cayenne pepper
1 1/2 teaspoon of salt
1 teaspoon of pepper
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
Rinse the quinoa and beans and set aside. Meanwhile heat up oil in a pot on medium-high heat.
Next, add the onions and sauté until softened. Afterward, add the tomato paste, garlic, thyme, and bay leaves. Continue to sauté for about 2 more minutes.
Afterward, add the quinoa, beans, and seasonings and stir for about 1 minute. Continue, by adding the coconut milk and stock.
Bring to a boil, while continuing to stir and then bring to a simmer. Cover and cook for about 25 minutes on low heat. When finished fork the quinoa to fluff up and serve!
